
Thai Mango Salsa
Ingredients
- 3 Serrano Peppers, Seeds & Stem Removed
- 1 Red Onion, Peeled & Cut into ½” slices
- 1 Red Bell Pepper, Quartered, Seeds & Stem Removed
- 1 Yellow Bell Pepper, Quartered, Seeds & Stem Removed
- ¼ Cup Olive Oil
- 3 Cups Mango, Fresh, Peeled, Diced
- 1 Bunch Flat Italian Parsley, Finely Chopped
- 1 Bunch Cilantro, Finely Chopped
- 1 Bunch Scallions, Cut on a ¼” bias
- 1 Cup Sweet Thai Chili Sauce
Preparation
- Light your grill. Toss all peppers and onions in the olive oil and place on the grill. Lightly char all ingredients and place on a tray to cool.
- Once cooled, dice all charred vegetables in a ½” x ½” dice.
- Place into a large bowl and toss, then fold in all remaining ingredients.
- Place into a serving tray/bowl.
- It’s a great accompaniment to grilled fish, blackened chicken & duck.
